Which framework to choose: Next.js, Astro, Remix, Nuxt?

Which API to use: REST or GraphQL?

Two approaches: (1) Native WC REST API (free, included in WC) — simple but limited in query flexibility, multiple requests needed to assemble a complex page; (2) WPGraphQL + WooGraphQL (free plugins) — GraphQL endpoint that lets you request exactly the data you need in one request, much more efficient for modern frontends. What about authentication + checkout?

Yes, included. Auth via WC cookies + JWT for mobile apps, persistent cart in localStorage with server-side sync, custom checkout using Stripe Elements (or other gateway), post-checkout webhook confirmation. The purchase funnel is fully controlled on the frontend while using WC for order management, stocks, fulfillment.

Do you also build native mobile apps on the same WC backend?

Yes, it's one of the most interesting cases. Same WC backend as your web, same catalog, same customers, same orders.
